Suggest a better descriptionPut milk, cream, vanilla in a saucepan and bring to a boil. Turn down heat to simmer for 3 minutes.
Whisk together yolks and sugar until light and fluffy - whisk in flours
Take milk off heat and cool for a few minutes.
Whisk 1/3 of warm milk into egg mix, stir, and then pour that all into the milk in saucepan, stirring and return to low heat.
Whisk constantly, slowly return to boil - it will thicken almost immediately and turn heat down and continue to whisk for a few minutes until smooth.
Cover with plastic wrap touching surface to stop skin from forming.
Once cooled can fold in whipped cream for lighter touch.
