A Frenchixan "enfrijolada". These crepes make a great appetizer or snack. If you like it spicy, add a few slices of habanero pepper.
• Blend the Acapulco paste with the tomatoes until smooth. Heat the oil in a small saucepan over medium-high heat. Pour the sauce, reduce the heat to medium, and let cook for 5 minutes.
• In a medium skillet, heat the refried beans. Move to a bowl. Add the queso fresco and heavy cream and mix all together. Reserve.
• To serve, place some of the bean and queso fresco mixture into each crepe, drizzle with sauce. Fold and add more sauce on top. Provecho!
