Delicious and can be used the next day as Chicken Parm
Mix Buttermilk, hot sauce and just a pinch of salt and pepper. Put chicken breasts in buttermilk and let sit for at least 1 hour and up to 8 hours.
Prepare 3 containers, I use cake pans. In one put the flour, garlic, salt and pepper. In #2 put the eggs, beaten lightly and milk or buttermilk and in the last one the breadcrumbs. Take out one piece of chicken, and place in the flour mixture to coat. Tap off excess flour and place in the egg mixture to fully coat. then place in bread crumbs to coat. Place on a cookie sheet and repeat with the remaining breasts. Place the cookie sheet in the fridge while you get the oil heated in a skillet. You want a skillet that will hold at least 2 of the breast and in it put about 1/2 inch of oil. Heat on high till oil is hot. Take breasts out of the fridge, preheat your oven to 275 Degrees and prepare another sheet pan with a couple layers of paper towels. Place breasts carefully in skillet and cook to golden brown, about 7-10 minutes, turn and repeat on the other side, remove breast to paper towel and repeat with remaining breasts. Once they are all done, while draining on paper towel, slice the mozzarella into 1/4 inch slices. Remove paper towel from under the breasts and place a slice of proscuitto on each piece then put one to two slices of cheese on top. Place in oven till cheese is melted. Enjoy
