Cut each onion into 4 thick slices; separate into rings. Reserve small rings for another use. SEt large rings aside.
Combine cereal, chili powder, sugar, cumin and red pepper; stir well. Place helf of cereal mixture in a shallow dish or pie plate. Set remaining half of mixture aside.
Beat egg substitute at high speed of a mixer until soft peaks form. Dip half of onion rings in egg substitute; dredge in crumb mixture in shallow dish. Place onion rings in a single layer on a baking sheets coated with cooking spray. Place remaining half of cereal mixture in shallow dish; repeat procedure with remaining onion rings and egg substitute. Bake at 375 for 10 minutes or until crisp. Serve warm.
