Baby Yukon Gold potatoes are best
Preheat oven to 450.
Bake potoes in oven about an hour
Mash with potatoe masher to about 1/4 inch thick
Brush potatoes evenly with about 1 tbsp oil
Bake another 15 mins
Wisk together remaining ingedient except for parmesan
Take out potatoes and spoon mixture over potatoes evenly and top with parmesan
Bake another 8--10 minutes until crisp
Bake Potatoes in foil so skins are not tough
