This is a really great recipe because everything cooks in the crock pot and all you have to do is shred it with 2 forks when it's done. Super easy and super good!
Heat oil in a skillet over medium-high heat and brown all sides of pork, about 12 minutes. Transfer to crockpot. Pour off all but 1 tablespoon of fat from the skillet. Add onion and cook until golden (5 minutes). Add vinegar - cook and scrape up browned bits (2 minutes). Stir in ketchup, molasses, brown sugar, pepper flakes, Worcestershire, mustard, salt, pepper and paprika. Cook until bubbly, 1 minute, and pour over pork. Cook on high heat for 4-5 hours, or low heat 8-10 hours. Shred pork, using 2 forks, on a cutting board. Skim any fat from the sauce and return pork to the sauce. Stir and serve on buns.
