Suggest a better descriptionIn a large bowl, mix together all the ingredients for meatloaf. Shape the meat mixture into a loaf and place in slow cooker. Cook on HIGH 2-3 hours or LOW 4-6.
About 10 minutes before cook time is completed, mix together ketchup ingredients and spread on top of meatloaf. Cover & cook the remaining 10 minutes.
For cauliflower mash:
Saute onion and garlic in a large pot with the olive oil over a low to medium heat until softened. Add the fine chopped cauliflower and 1/4 cup water or vegetable stock.
Cover the pot completely with a tight fitting lid and turn down to heat to a low simmer
Cook for 5 – 10 minutes, stirring halfway through and checking to make sure there is still enough liquid to steam the cauliflower. It’s important not to overcook it to keep the fresh flavour intact.
Remove from the heat and place into a blender or food processor.
Season with a little sea salt and white pepper. Blend until smooth and creamy.
For Brussel sprouts:
Preheat oven to 400 degrees F.
Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly. Sprinkle with more kosher salt ( I like these salty like French fries).
Serve it all up together and dive in!
