Rub lamb with olive oil.
Combine spices (Salt, pepper, garlic, thyme and coriander) together and press on lamb.
Toast on middle rack for 30 to 35 min Target temp is 130 def F
Put on board and cover with foil and rest for 20 minutes
Add sherry vinegar, mustard and rosemary to the drippings and stir to combine.
