Quiche with sausage, spinach, cheese, and shallots. My kids even loved it!
Add Extra Virgin Olive Oil to a saute pan and shallots. Cook shallots until tender. Add frozen spinach and saute until thawed and most water evaporated. While cooking, grease 2, 9" pie plates. Transfer 1/2 of shallot/spinach mixture into the bottom of each pie plate. Brown sausage and crumble. Add 1/2 of sausage mixture to each pie plate. Top both pie plates with cheese. Mix together milk and cornstarch with a whisk until smooth. Add eggs and salt and whisk until smooth. Pour 1/2 of egg mixture into each pie plate. Bake in oven at 425F for 28-32 minutes, or until center of quiche is set. Serve Warm.
An excellent compliment to this meal is silver dollar pancakes with fruit topping.
