2:1 flour-water ratio (Finished loaf approx. 1.5 lbs)
mix ingredientstogether,
knead for a couple of minutes
Let rise to double
Punch down, let rise again to double
Divide into equal loaves ( approx. 1.5 pounds each)
Bake in hot 425 degree oven for nearly 1 hour, until deep-tan color. convection: 400F for approx. 48 minutes)
Optional: refrigerate one half for baking another day; additional flavour may develop. When ready to use, shaped into the desired loaf, cover and let rise and reach room temperature for an hour or so, then bake.
