This is delicious served with Indian flat bread & a dollop of Greek yoghurt or sour cream!
Heat oil in a large pot, add onion & ginger, stir until onion is slightly transparent, add dry spices & cook for about a minute, till fragrant.
Add tomatoes, garlic & stock, when boiling add lentils & reduce heat, cook till lentils are soft, stir often so lentils don't stick, add extra water if too thick.
