Pull them from the heat the instant they're done so they don't turn tough and rubbery. And as with all egg dishes, dig in right away - they're not getting any better as they cool off.

1. Melt butter in an 8-inch non-stick skillet over medium-high until better is bubbly.
2. While butter melts, break eggs into a small bowl.
3. Use a fork to beat until completely blended and slightly frothy.
4. Stir in pepper and salt.
5. Add egg mixture to pan. Start pulling eggs from the sides of the pan into the middle.
6. Remove from heat after 3 minutes or until they're fully set.
