oven heated to 400*F scub potatoes.
pierce potatoes with a fork and bake for 1 hour.
melt butter in a nonstick skillet saute peppers and onions until tender add han and cook 5 minutes.
cool potatoes slightly and reduce oven temperature to 350*F.
slice the tops off the potatoes and scoop out the pulp reserve the jackets for restuffing, careful not to damage skins.
in bowl mash the pulp stir in 1 1/2 c cheese, milk, sour cream and sauteed vegetables.
stuff potatoes with pulp mixture, place on cookie sheet and top with remaining cheese and crumbled bacon.
bake about 20 minutes until heated through
