1. First Rise
Beat batter with hand or paddle mixer attachment until sticky but smooth. Place in a lightly oiled bowl and cover gently with a cloth. Please in a warm, draft-free environment until doubled in size (approx. 35 - 45 minutes).
2. With oiled hands, turn out on to baking pan coated with olive oil. Work to desired thickness, generously using more olive oil to prevent sticking hands. Sprinkle with desired topping. Pick simple combinations (see below); less variety is better. It will take much more salt than you expect to flavor the bread.
3. Second Rise
Let rest in a warm, draft-free environment until doubled in size (approx. 25 - 40 minutes). Gently dimple top of focaccia with fingertips before popping into the preheated oven to 425 F. Bake 10-12 minutes until lightly golden. Reduce heat to 325 and continue to bake another 10-12 minutes or until golden brown and crusty on top.
