Cut chicken in half and pound between parchment paper, until thin.
Sift the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage, paprika, and cayenne in a pie plate.
In another pie plate, whisk water and egg.
Dip chicken in flour, egg, and flour. Fry in medium hot oil, until no longer pink.
In a saucepan, add olive oil and garlic, until soft. Add honey, soy sauce, and pepper. Simmer for 5 minutes, until thick.
