A delicious and easy appetizer. The balsamic vinegar gives it a little bite. Dried basil can be substituted but it is best with fresh.
1. Preheat the oven on broiler setting.
2. In a large bowl, combine: tomatoes, sundries tomatoes, chopped herbs, garlic, vinegar, olive oil, salt and pepper. Allow to sit for 10 minutes.
3. Cut the baguette into 3/4-inch slices. On a baking sheet arrange the slices in a single layer. Brush lightly with a little olive oil and top with cheese.
4. Broil for 5 minutes, or until the baguette is golden brown and/or the cheese is melted.
The key to an amazing tasting bruschetta is really the fresh chopped herbs. In a pinch you can substitute dried, but ONLY in a pinch. To make this recipe really pop make sure you use fresh herbs.
