Save and freeze the leftover broth in freezer to reuse.
1] Place the Shaoxing, mirin, water, palm sugar and ginger in a large pot and bring to the boil.
2] Add the chicken, then cover and simmer very gently (liquid barely bubbling) for about 45 mins.
3] Add in goji berries at the last 10 mins of simmering.
4] Season to taste with salt.
5] Remove the pan from the heat and allow the chicken to cool in the poaching liquid.
6] Serve chicken with poaching liquid. (there'll be lots of poaching liquid, so freeze them for future use.)
