Suggest a better descriptionWash the strawberries and hull them, removing caps and stems.
Chop the strawberries and put them in a medium stainless steel saucepan. Add the sugar and place the pan over medium-low heat. Bring the mixture to a boil and add the lemon juice. Keep the mixture at a steady boil for about 20-25 minutes, or until the jam reaches 220°F on a candy thermometer.
Remove from heat and let cool slightly. Place in preferred container, cover, and refrigerate.
When taking the preserves out to use, make sure to put back in fridge as soon as possible after each use for the longest storage time. (About 2-3 weeks refrigerated shelf life).
