Warm healthy soup you can whip up in a flash!
Sauté bell peppers and onions in medium sauce pan until onion is almost translucent, stirring to keep from burning peppers. Add minced garlic and continue to sauté for another minute or so until garlic is fragrant. Add ground beef to veggies and continue to cook until meat is all browned. Sprinkle taco seasoning over meat and continue to cook for a few minutes.
While veggie and meat mixture is cooking, empty all canned ingredients and water into a large soup pan (including all liquids in cans). Cook over medium to high heat. Add meat mixture into soup pan, sprinkle in ranch mix and stir well. Bring to boil, then simmer uncovered for at least 15-20 minutes.
Delicious with hot pan of cornbread.
Leftovers make great taco salads, or can be frozen for quick meals later.
