This is good warm and cool and keeps in the refrigerator for a day or two.
While frozen corn works here, fresh is best. In addition to plain, you can find both smoked tofu and tofu labeled "savory flavored."
I have made this without the tofu and the olive oil and it is still delicious (saute the onions and garlic in just a little vegetable broth)
