Recipe for the famous Orange Muffins served at Edward's Mansion in Redlans, California. Possibly the best orange muffins you'll ever eat.
Mix together all dry ingredients. Add (one at a time mixing between each ingredient addition) butter, shortening, milk, eggs (mix well between each egg) and orange juice. Fold in orange sections and orange zest until incorporated. Fill well greased or paper lined muffin cup 2/3 full. Bake at 375 degrees for 20-25 minutes or until toothpick inserted into center of muffin comes out clean. Makes 36 muffins.
Unless you have large oranges, increase the zest and meat of the oranges to two or three. Discovering the diced orange pieces when taking a bite of this muffin is what makes it special.
