Eggy Cheesy muffins/crustless quiche, freezes well for make ahead breakfasts

Preheat oven to 350 degrees farenheit
Lightly grease 8 cups of muffin pan
In medium bowl, whisk eggs, cream, 1/2 cup of cheddar, bacon and cilantro
Season egg mixture with salt and pepper
Evenly pour the egg mixture into the muffin cups
Bake muffins until they are cooked through and lightly browned, about 15 minutes
Remove muffin pan from the oven and change the oven heat to broil
Sprinkle tops of muffins with extra cheese and broil until cheese is melted and bubbly, about 1 minute.
