This is a casserole that can be whipped up quickly and doubled for an easy brunch food!

1. Freeze cream cheese overnight
2. Preheat oven to 35 degrees.
3. Add butter, onion, and pepper to a large pan. Saute for 3-4 minutes, stirring constantly.
4. Spray a baking dish with cooking spray. Line the bottom of the dish with the onions and peppers.
5. Crack the eggs into a large bowl, and add salt and milk. Whisk until mixed well.
6. Pour egg mixture over vegetables in baking dish.
7. Bake 20 minutes, until eggs are half set. While eggs are baking, grate the frozen cream cheese into a bowl.
8. Remove eggs from oven and stir mixture, breaking up any large pieces. Turn oven heat up to 400 degrees.
9. Sprinkle grated cream cheese evenly over top. Pop back into the oven and bake for 15 additional minutes.
10. Remove from oven. Sprinkle paprika over the top and serve.
