Quick breakfast, can be made the day before and reheated.
Preheat oven to 350 F.
1. Fry bacon in cast iron skillet, or non stick pan. Do not fry to crisp, leave the slices of bacon flexible. Set aside teaspoon of bacon grease.
2. Butter Each slice of bread with approx. 1tsp. of butter or margarine.
3.Use round cookie cutter or glass, to cut a hole in the center of each slice of bread.
4. Grease cookie sheet with the reserved bacon grease.
5.Place slices of bread, buttered side down, on the cookie sheet.
6.Center two slices of bacon over each slice of bread, creating an x with the bacon slices over each slice of bread.
7.Press middle of the bacon slices into the center of each hole. Then crack one egg into the center of each slice of bread. Be careful not to break the yokes.
8. Sprinkle cheese over each slice of bread.
9.Bake for 15 min. at 350 F.
Optional-Garnish with chopped green onion before serving.
