Directions
Heat the coconut oil in a large cast-iron skillet over medium heat. Add the sausage, onions, and garlic and cook until the sausage is cooked through, about 5 minutes, stirring to break up the sausage. Add the tomatoes with juices, tomato paste, paprika, and salt and stir until well combined. Crack the eggs over the tomato mixture, cover, and cook for 7 minutes, or until the eggs are cooked to your liking. Garnish with fresh herbs, if desired.
