This is good
Preheat oven to 350 F. Heat oil in large skillet and saute onion, garlic, mushrooms, green pepper. Add beans, tomatoes, spices, wine and simmer, covered, for 30 minutes. Combine ricotta or cottage cheese with yogurt. Put a layer of tortillas in a couple casserole dishes (4 to a layer). Top each tortilla with a half cup tomato mixture, 1.5 Tbsp cheese, and 2 Tbsp cheese-yogurt mixture. Lay another layer of 4 tortillas down and top again with tomato mixture and cheese. Repeat layers until all ingredients are used, ending with a layer of sauce. Sprinkle half cup grated cheese over top of sauce. Bake for 15-20 minutes.
Serves: 12 (1/3 of a tortilla stack per person)
