Sauté chopped onions in butter. Add baby spinach to wilt. Add spices to taste. Cook until golden. Butter a casserole dish.
Cube french bread into dish. Add onion-spinach mixture. Add 1 3/4 cup Gruyere and 3/4 cup Parmesan cheese (most but not all of cheeses). Add cooked meet.
Beat 9 eggs, whisk in milk, add mustard, salt and pepper. Pour over bread mixture. Top with remaining cheeses.
Cook for 40-50 minutes.
