A classic dish with fresh ingredients of heavy cream, real parmigiana-reggiano cheese and fresh egg fettuccine.
Bring to a boil in a large pot 6 quarts of water and 2 tablespoons salt. Add and cook until tender but firm fettuccine.
Melt in a large skillet a stock go unsealed butter. Drain pasta but retain 1/8 cup of the liquid. The starchy water will help the sauce thicken. Add the pasta to the skillet with butter. Now add a cup heavy cream, a cup of the freshly grated Parmesan. It is important that you grate this cheese at home and do not use already grated cheese. They add to many preservatives and it changes the taste of your sauce. Add salt and pepper to taste and serve. Keep the pasta covered if left on the stove.
You can add any protein to this dish.
This is high calorie but worth it! You won't taste a better Alfredo in Italy.
