Beef, pumpkin and spinach gozleme
METHOD – GOZLEME DOUGH PREPARATION
1. Combine flour and 1 tsp salt in a large bowl. Gradually stir in 2/3 cups warm water and mix to form a soft dough.
2. Knead dough on a lightly floured surface for 5 minutes or until smooth and elastic.
3. Return to bowl. Cover with a tea towel and set aside.
METHOD - FILLING
4. Heat 1 tbs oil in a large frying pan over medium-high heat.
5. Add onion and garlic and cook for 5 minutes, stirring, or until softened.
6. Add mince and cook for 5 minutes, breaking up lumps with a wooden spoon, or until browned.
7. Add spices and cook for 1 minute, stirring, or until fragrant.
8. Add pumpkin and tomatoes. Cook for 7 minutes or until liquid has almost evaporated.
9. Stir spinach into beef mixture.
10. Combine cheeses in a bowl.
METHOD – GOZLEME
11. Divide dough in half. Roll out 1 portion on a lightly floured surface to a large rectangle.
12. Top half of dough with half of the beef mixture, leaving a 2cm border.
13. Sprinkle over a quarter of the cheese mixture. Fold in half to enclose filling.
14. Use a rolling pin to seal edges. Repeat for both gozlemes.
15. Heat a frying/electric pan or sandwich over medium heat.
16. Cook gozlemes for 2-3 minutes on each side, brushing with a little of the remaining oil, or until golden and heated through.
17. Serve with lemon.
