Delicious greek bean soup.
1 - Wash and soak overnight the dried white beans on cold water
2 - Chop garlic, onion, carrot and celery.
3 - In a big pot warm the oil to medium heat and stir the chopped garlic, celery and onion. Add some salt and cook with cover until onion is tender.
4 - Drain and wash the beans with water.
5 - Add the drained beans and the carrots into the pot and stir. Let cook for aprox. 5 minutes
6 - Chop tomatos and add to the pot. Stir.
7 - Add water and salt. Cook approximately for 1 hour and a half (or until beans are tender). In a pressure cooker the cooking time is only 10-15 minutes.
8 - Add parsley and cook 5 minutes more.
9 - Taste and correct salt and pepper.
10 - Serve and add a spoon of Greek yoghurt on the top of the soup.
Different white beans need different time to cook. The cooking times can vary between 1 and 2 hours.
Use approximately 800 grammes of cooked white beans (from a can) if you want to avoid to cook the dried beans.
