This summertime favorite has been served at Beit Rima in San Francisco since 2019, when chef Samir Mogannam visited a local farm and left with inspiration to create this celebration of ripe figs. Instead of honey for the sweetness, the figs are finished with a Middle Eastern staple--carob molasses, a dark, thick, sweet syrup with a subtle chocolate flavor. The final dish is an intoxicating combination of olive oil, figs and carob, all produce that grows on trees in the Levant.
