Suggest a better descriptionFry bacon in skillet. When really crispy remove and crush into little pieces and put aside. Add onion and celery saute until golden. Add flour and stir for about 1 - 2 minutes (making a roux).
Add chicken stock, clam juice, and stir with a whisk until blended well.
Poach or boil fish, scallops, and shrimp then add to mixture. Add half-and-half, salt and pepper to taste. Mix well and cook about 20 minutes on low heat, stirring occasionally.
You can cut the bacon into pieces prior to cooking.
If you would like a thicker chowder add extra cornstarch.
