Caramel
In saucepan dissolve sugar in water. Bring syrup to a boil. Leave uncovered and undisturbed until it begins to turn gold. Continue to boil swirling the saucepan now until the syrup turns into a caramel color. Pour immediately into a non-stick pan and swirl pan to coat bottom and partly up the sides. Be sure to use oven mitts as pan will quickly get hot. Once caramel hardens set aside.
Flan
Preheat oven to 325 degrees. In another saucepan heat milk and cream just until skin forms on top (do not let it boil).
In a large (separate bowl) whisk the whole eggs, yolk and sugar. Add warm milk and continue mixing until all is well combined. Add vanilla. Pour mixture through a fine streamer into the caramel pan. Cover pan with foil and set inside a larger shallow pan (I usually place a small piece of paper towel on bottom to prevent slipping). Pour hot tap water into the other pan covering about an inch. Bake for about an hour to an hour and 10 minutes (until a knife inserted about an inch from the edge comes out clean. Flan will continue to set as it cools. Take flan out of water and set out to cool. Once cool cover again and refrigerate for at least 3 hours before serving.
When ready to serve, run knife around the side to loosen. Flip over on a platter and enjoy.
You also use a total of 4 cups of milk (instead of 3 milk / 1 cream) for a lighter flan.
