Banana bread with lots of banana for a full, tasty flavor.
Preheat Oven to 350 degrees.
Grease bread loaf pan.
Mash bananas in food processor until smooth. Set aside.
Sift together flour and baking soda into small bowl or onto wax paper. Set aside.
In large bowl, Cream butter and sugar with mixer.
Add eggs and beat.
Fold in remaining ingredients previously set aside. Mix thoroughly.
Bake in greased loaf pan at 350 degrees for 55-60 minutes; until toothpick inserted near center comes out clean.
Cool in pan on wire rack for about 15 minutes. Remove from pan and let cool another 30 minutes. Cover with clean kitchen towel and continue cooling until room temperature or nearly so. Wrap in plastic wrap and let sit on counter for several hours or overnight for best results.
Muffin Variation (makes 12-18 depending on how big you like them):
Pour batter into muffin pans. Bake at 350 degrees for about 27 minutes.
Lower fat variation:
Reduce butter to 1/4 cup and add 1/4 cup unsweetened apple sauce. This bake best when made as muffins.
Avoid using a dark metal loaf pan. Otherwise you will have difficulty getting the center to finish cooking before the edges are overdone. I use a silicon loaf pan.
I make mine in the evening and then wrap up overnight. The taste and texture is best the following day.
