Banana bread recipe that uses hemp FLOUR instead of just hearts. I like the fiber and fuller nutritional profile of hemp flour.
Preheat oven to 350 degrees. Line a small loaf pan with parchment paper or spray with Carrington Farms nonstick cooking spray.
In a small bowl, mash the bananas well. Add the egg, vanilla extract, coconut oil and milk. Whisk until all ingredients are well-incorporated.
In a medium bowl, add all of the dry ingredients and mix with a fork to ensure they are well-combined.
Slowly and while whisking, add the dry ingredients to the banana mixture. The “batter” should be a little lumpy and not too wet. If it appears to be too dry, just add more coconut milk.
Pour the mixture into the loaf pan, patting it neatly into place. Bake at 350 degrees for about 45 minutes. Since ovens vary, start checking the bread at the 35 minute mark. Allow it to cool on rack before serving.
