Great traditional Tex-Mex tortillas
Mix all dry ingredients. Cut in shortening until the dough forms smaller balls. Add warm water slowly. Continue mixing until dough forms into a single ball. Knead dough until earlobe soft. Cover with plastic wrap or moist cloth for 30 minutes.
After the 30 minutes, Begin preheating griddle on medium heat.
After dough rises, pinch dough off to form a smaller 11/2 - 2 inch dough ball. Keep covered.
Use flour and a rolling pin to flatten dough to 8-12" diameter. Pace rolled out dough onto griddle. Flip once after bubbles form on uncooked side. You'll cook each side once then place tortillas in a tortilla warmer or a clean, dry towel.
Store in refrigerator for up to a week; never freeze them.
