Suggest a better descriptionMix warm water, yeast and honey. Let stand for 5 min to ensure yeast is active - should get foamy. Add flour and 1 tbsp salt and combine into a soft, sticky dough.
Coat an empty large mixing bowl with olive oil and transfer dough into bowl. Cover and proof in the refrigerator for 8 hrs (or up to 24hr)
Preheat oven with a baking steel on middle rack at 450F.
Transfer dough onto lightly floured pizza peel and shape into a large round. Brush surface with olive oil to coat, sprinkle with coarse sea salt and rosemary sprigs.
Transfer onto pizza steel and bake for 20-30 min until golden brown.
Heat butter and garlic in a small saucepan until lightly toasted, then brush freshly baked bread with the garlic butter and serve right away.
