Suggest a better description1. Prepare smoker to 225 degrees.
2. Cook pasta according to package instructions.
3. In a medium saucepan, melt butter and whisk flour into the butter. Cook over medium heat for 2 minutes, until the sauce is bubbly and thick.
4. Whisk in milk and bring to a boil. Cook 5 minutes until thickened.
5. Stir in cream cheese until mixture is smooth. Add salt and pepper.
6. In a large bowl, combine 1 cup cheddar, cup Gouda, parmesan cheese, pasta and cream sauce.
7. Spoon mixture into a 11X9 inch aluminum roasting pan coated with nonstick cooking spray.
8. Sprinkle top with remaining cheddar and gouda cheese.
9. Place in smoker and cook 1 hour at 225 until brown and bubbly.
