Suggest a better descriptionPreheat oven to 350F. Spray a 12-cup muffin pan with non-stick oil, or generously grease tins with butter. Set aside.
Add cooked bacon, red bell pepper, onions and spinach in each muffin tin, about 2/3 full. (Divide evenly among greased muffin cups.
Whisk eggs and season with salt and pepper.
Add egg mixture to each muffin tin until 3/4 full. Sprinkle cheese on top.
Bake for 20 minutes or until a toothpick inserted in the center comes out clean. As soon as muffins are removed from the oven, run a small spatula around the edges to each muffin to loosen.
After freezing, best to defrost in fridge overnight, then microwave for 20-30 seconds.
if reheating from frozen, remove plastic wrap & then wrap in a wet paper towel. Microwave for 60 - 90 seconds.
