French chocolate cake recipe by Caroline Roques, my beloved girlfriend and talented cook.
(250 g=1 bad minus 1/2 cup) or 2 whole bars and 2 squares of Ghirardelly 60% chocolate + Milk (not a full glass, 2% cold) – combine in a glass bowl on top of the smaller saucepan with boiling water to melt. Stir with rubber spatula to a consistency of thick sauce. Don’t overheat. Set aside when done.
150 g butter (1 stick+2 pieces) chopped in pieces in glass bowl warm up in microwave for less then minute on medium power setting to soften. Add 150 g of sugar (2/3 cups) to butter and mix well. Add 3 eggs and 50 g (slightly less than 1/2 cup) flour, mix well. Add liquid chocolate mix prepared earlier to the dough, mix well. Add 1 tea spoon of peppermint extract. Transfer to flat buttered container. Bake in preheated to 350 C oven for 20-25 minutes.
Tastes even better if served with liquid chocolate syrup/sauce. Good both warm or cold.
