I adapted a french dip recipe from Food Network about 10 years ago. This is quick. There are two options. The cooking time is contingent up on the type of meat you use.
Mix all remaining ingredients (except onions, oil and meat) in slow cooker.
Option 1 You can add the meat and chopped onions directly to the slow cooker
or
Option 2 for extra flavor take a moment to sear the meat and blacken or caramelize the onions. In a dutch oven heat oil on medium high heat and add meat, searing on all sides for approx 1-2 min each. Place meat in the slow cooker. In the dutch oven add the rest of the oil, reduce heat to medium and add sliced onions until lightly blackened or medium-low to caramelize, stiriring frequently. Add on top of meat.
Turn slow cooker on LOW 6-7 hours if using a briske;t or 8-10 hours if using a roast. If you're short on time you can do 2 hours on high and 5 hours on low ONLY for roasts. if you do this with the brisket it will be very dry.
Split baguette in half and cut to the length of choice. Place on an un-greased cookie sheet under the broiler for 1-2 minutes until very lightly toasted.
Remove the meat from the slow cooker (reserve and strain the au jus from the slow cooker). Slice the meat across the grain, stack on top of the baguette and serve with strained au jus.
Serve with beer
