1. heat olive oil in dutch oven, add onion and saute 3-5 min. Add carrot & celery, cook 5 min. Add garlic, stirring 30 sec or so. Add lentils, 2 quarts water and bouquet garni (tied up in cheese cloth). Bring to boil, reduce and simmer 40 min. Add S&P. Remove bouquet garni.
2. Stir chard into simmering lentils. Cook 10 min (chard should be tender but still bright). Top with cheese or pass around.
