Mmm...good. Great use of french bread that's gotten just a touch hard - it works even better than fresh bread in this soup!
Melt butter in large soup pot. Add onions, sprinkle with sugar. Stir frequently over medium heat about 35 minutes. Sprinkle flour over onions and stir until evenly mixed. Add apple juice, broth, thyme and Worcestershire sauce. Simmer, covered, for 30 minutes.
If bread is fresh, cut into 1-inch pieces and then toast on a tray in your oven until slightly hard. If bread is already hard, just cut up and you're ready.
Ladle soup in broiler safe bowls. Cover top surface of soup with bread pieces. Sprinkle each serving with cheese (I don't actually measure it). Put under broiler for 1 minute, or until cheese is starting to brown.
