Country style potato salad prepared in the style of Southern France
Prepare potatoes for boiling and cook as usual.
Blend the vinegars with the dijon mustard until the mixture is smooth.
When the potatoes are cooked, drain away the water. Whilst the potatoes are still warm, coat in the mixed vinegars and leave for a while for the flavours to be absorbed.
Finely chop the onion, mince or finely chop the garlic, and mix the two together. Sprinkle the onions and garlic over the potatoes and drizzle the extra virgin olive oil over the top.
Gently mix the onion, garlic and olive oil into the potatoes until evenly mixed.
Serve whilst still warm, or allow to cool and place in the refridgerator until required.
