Originally from my very good friend Joanna Wolfe. Fantastic mix of flavors and with the addition of the lemon juice, it even does well in the refrigerator overnight.
Combine avocado, onion and jalapeno into a bowl and using two forks, start to combine until you reach a desired consistency (more chunky for those that like chunky guacamole, less chunky for those that like it smoother). Add chili pepper, salt, pepper, tomato, lemon juice, and cilantro and mix to integrate. Serve immediately.
