Suggest a better description1. Heat butter in a large saucepan, add the leeks and onion, and cook over medium-low heat for 5 to 10 minutes, until the onion is tender.
2. Add stock, increase heat to high; bring to a boil.
3. Add peas and cook for 3 to 5 minutes, until tender. (Frozen peas will take 3 minutes.)
4. Add salt and pepper.
5. Puree with immersion blender.
6. Garnish with creme fraiche, chives, and croutons.
You can add diced carrots. Fresh peas will make it better. Freezes well without cream. You can use sour cream if no creme fraiche.
