A quick peach pie - tasty. Can be made in a 9X13 pan or pie plate. -serving numbers will vary based on the size of pan.
Crust:
with hand mixer- mix together crust ingredients on medium and spread in a 9X13 pan.
bake 15-20 minutes until golden brown.
Topping:
combine water, cornstarch and 1/2 cup sugar -boil until thick and clear. Then remove from heat and add 2 T peach jello powder. Cool.
Peel peaches and arrange on the cooled crust - when jello mixture is cooled slightly, pour/spread over peaches. Place pan in fridge and let cool. Top with whipped cream or ice cream a la mode when ready to eat. Keep refrigerated.
I have made this in a pie plate (thicker crust), 9X13, a round pan - anything works - some resulting "pies" are then thicker than others. The juiciest, fully ripe peaches work best.
