Great fried rice adapted from Emeril's recipe.
Cook 2 small cups brown rice
Thaw 1 cup cooked shrimp & cut in half through the center
Mix paprika, garlic & onion powder, salt, cayenne pepper, oregano, thyme
Add spices to shrimp, and set aside
Fry 1/3 pack bacon or ham in small pieces
Mince 3 cloves garlic
Mince 1 tsp ginger
Chop 1-2 carrots into small pieces
Chop 1/2 large onion into small pieces
Chop 2 bunches spring onions, save half for garnish
Stir fry for 1-2 minutes
2 tbs olive oil
2 tbs sesame oil
1 tsp red pepper flakes
Garlic, ginger, 1/2 of spring onions
Add and stir fry for 3-5 minutes to soften:
Carrots, onions, edemame, peas, shrimp, bacon
Add brown rice and stir fry for 5 minutes with
1 Tbs soy sauce
1 tsp sugar
1/2 tsp pepper
Break 2 eggs into mixture and stir-fry until cooked.
Garnish with spring onions.
