1. Preheat oven to 400 degrees. Lightly grease 2 large baking pans. Combine 1 tbs oil, salt, and 1/4 t pepper in medium bowl; mix well. Add mushroom caps; toss to coat. Arrange mushrooms, rounded side down, on baking sheets; set aside.
2. Heat remaining 1 T oil in large skillet over medium heat. Add onion, garlic and remaining 1/4 t pepper. Cook 5 min. Add spinach and oregano; cook 2 to 3 min. Remove from heat; stir in 1/2 c cheese and bread crumbs. Cool 15 min.
3. Combine eggs and half-and-half cream in medium bowl; mix well. Stir in spinach mixture. Spoon filling into mushroom cavities. Sprinkle with remaining 2 tbs cheese. Bake 10 to 15 min or until mushrooms are tender. Serve warm or at room temperature.
Makes 30 mushrooms.
