Tomato & ground meat Jordanian dish (Zeinat's recipe)
Chop the onions, garlic, and tomatoes.
Fry in one pan: ground meat with some of the chopped onion, salt, pepper and cinnamon with ghee. (Zeinat uses beef)
Fry in a different pan: chopped onion, green pepper and garlic (~2-3 cloves?), then add chopped tomatoes. Then add one beef stock cube. Then add .5-1 can tomato paste. (~2/3 can for 2 tomatoes, so probably close to 1 can for the amounts here) Stir. Then add 1-2 cups of water and let boil until tomatoes are soft. Combine all into one pan and cook a bit longer. If desired, to make it less soupy, put in oven for a bit. Top with pine nuts.
Serve over rice. You can serve with hot pepper paste or sauce on the side.
*Some recipes skip the meat, or add other spices, or add at the end fresh mint or other herbs.
